Roasted Pine Nut Hummus

Discover the Comforting Goodness of Chickpeas with This Delicious Hummus Recipe. Looking for a nutritious and comforting dish? Ingredients:

  • 1 can of chickpeas
  • 2 tablespoons hulled tahini
  • Squeeze of one lemon
  • 1 bulb of garlic
  • Half a cup of pine nuts
  • 1/4 cup ice-cold water
  • Lashings of olive oil
  • Salt and pepper to taste

Method:

  1. Preheat the Oven Set your oven to 180°C (fan-forced).
  2. Prepare the Garlic Trim the top off the garlic bulb, drizzle with olive oil, season with salt, and wrap in foil. Bake for about 30 minutes or until the garlic is golden and soft.
  3. Toast the Pine Nuts In a saucepan, toast the pine nuts with a bit of olive oil and salt over medium heat until they are fragrant and golden brown. Set aside.
  4. Prepare the Chickpeas Drain and rinse the chickpeas, then place them in a food processor.
  5. Combine Ingredients Add the roasted garlic, tahini, lemon juice, and ice-cold water to the food processor with the chickpeas. Season with salt and pepper to taste.
  6. Blend Blend all ingredients until smooth. Adjust the consistency with additional water or olive oil if needed.
  7. Serve Transfer the hummus to a serving dish and top with the toasted pine nuts for added crunch.
  8. Enjoy Serve this homemade hummus with fresh vegetables, pita bread, or use it as a spread on sandwiches. It's a versatile and healthy addition to any meal.
