Peach, Pear & Blueberry Crumble
Fruit crumbles are a delicious and comforting dessert that are perfect for that time of the month, This recipe combines juicy peaches, pears, and blueberries with a crunchy oat and nut topping that's sure to satisfy your sweet tooth!
Ingredients:
Filling
- 2 cups fresh peaches, peeled and sliced
- 2 cups fresh pears, peeled and sliced
- 1 cup fresh blueberries
- 1 tsp coconut sugar
- 1 tsp ground cinnamon
Topping
- 2 tbsp almond meal
- 1/2 cup coconut oil, melted
- 1 cup rolled oats
- 1/4 cup unsweetened shredded coconut
- 2 tbsp coconut sugar
- 1/2 cup sugar-free maple syrup
- 1/4 tsp cinnamon
- Handful of chopped walnuts
Instructions:

Preheat the oven to 180°C. Grease a 9-inch baking dish with coconut oil.

In a bowl, combine the sliced peaches, pears, and blueberries. Add the coconut sugar and cinnamon, and stir to combine.

In a separate bowl, mix together the almond meal, melted coconut oil, rolled oats, shredded coconut, coconut sugar, sugar-free maple syrup, and cinnamon until well combined.

Spread the fruit mixture evenly in the prepared baking dish.

Top the fruit with the oat mixture, spreading it out evenly.

Sprinkle the chopped walnuts over the top of the oat mixture.

Bake for 35-40 minutes, or until the topping is golden brown and the fruit is tender.

Serve warm with a scoop of non-dairy ice cream or yogurt, if desired.
